Vegetarian fried rice with vegetables is delicious, but most of us do not make it at home. When it’s purchased out, it’s mostly rice and a few vegetables!
I decided it’s about time I cooked vegetarian fried rice at home and gave it a healthy makeover. My goal is to make a version that is at least 50% vegetables, and also to use healthier rice than the standard white rice.
This fried rice was a hit. It did not have the oil sheen common in restaurant versions and the extra vegetables kept it light and a healthy diet habit choice. I would definitely make this again, and I’m sure it will become one of my favorite healthy recipes; it’s quick, easy, and tasty, which are my criteria for a repeat meal!
