Yakisoba

Yakisoba is a type of Japanese noodle recipe that includes stir fried meat, vegetables and noodles. It’s delicious when cooked with vegetables that you love. I used to purchase yummy noodles from Costco, but they were full of food additives and very caloric. I don’t buy them anymore and have not made this recipe in ages for that reason.

Healthy eating is about finding substitutions for foods that you want to limit or finding healthy upgrades that will work. I know rice noodles would work well in this recipe, but I was at Trader Joe’s and they don’t carry them. I grabbed linguini noodles, hoping they would work. Well they worked great, so here is the revamped recipe. It’s a large recipe that will make 8 large servings, which was my plan; lunch leftovers for the rest of the week!


Yakisoba Ingredients


Ingredients in Yakisoba

Chopped chicken


  • 1 onion sliced
  • ¼ prepared garlic
  • 2 T Sesame oil
  • 1 chicken breast
  • 2 lbs. fresh green beans with ends removed
  • 1 10 oz bag chopped green cabbage
  • 1 to 2 cups grated carrots
  • 1 lb. linguini cooked
  • Soyaki to taste

Directions for Yakisoba

Yakisoba Vegetables


  • Stir fry the onions and garlic in sesame oil, until browned. Push to the side of the pan.
  • Add the chicken and stir fry it until cooked through and remove from pan.
  • Add the green beans and ½ cup water and cover them for a few minutes until they are cooked but still crispy.
  • Add the green cabbage and carrots to the green beans and cook for a couple of minutes.
  • Add the cooked linguini and ½ cup soyaki or more.
  • Return the chicken to the pan and heat through and mix it all together.
  • Serve with extra Soyaki sauce.

This modified recipe was delicious and one of my favorite healthy recipes. You can add any vegetables that you love to the mix. I always use green beans and cabbage, but red peppers go well and look pretty. I love making this at home because it’s easy to include your favorite vegetables and a nice amount of them, which is a healthy diet habit to adopt.

Since I started making this recipe at home, I have been highly disappointed when I order it in a restaurant. It’s usually very oily and mostly noodles, with very little vegetables included, even when I order a vegetarian option.
