Vegetarian Fried Rice with Vegetables
Vegetarian fried rice with vegetables is delicious, but most of us do not make it at home. When it’s purchased out, it’s mostly rice and a few vegetables!
I decided it’s about
time I cooked vegetarian fried rice at home and gave it a healthy makeover. My goal is to make a
version that is at least 50% vegetables, and also to use healthier rice than the
standard white rice.
Vegetarian Fried Rice Ingredients
- 6 cups
cooked brown jasmine rice
- 2 T oil
- 1 T fresh
grated ginger
- ¼ cup
prepared garlic
- 1 onion finely
chopped
- 2 red peppers
chopped
- 1 16 oz bag
frozen petite peas
- 3 yellow
squash chopped
- Reduced Salt
Soy Sauce
- Chopped
Green Onions for topping
- Peanuts for
topping
- Salt and
Pepper to taste
Vegetarian Fried Rice Directions
- Cook rice
according to package directions.
- When the
rice is almost done, heat the oil in a wok or stainless steel electric skillet
or wok. Add the ginger, onion, and garlic and stir fry until they are lightly
browned. Push to the side.
- Add the chopped
red peppers, frozen peas and chopped yellow squash and stir fry for a couple of
minutes, until peas are cooked through and the squash and peppers are crisp
tender.
- Add the
cooked rice and stir fry it with and vegetables until heated through. This will
only take a minute or two.
- Add the soy
sauce to taste.
- Serve topped
with Peanuts, chopped green onions, and Sriracha if you like food spicy hot!
This fried rice was a hit. It did not have the oil sheen common in
restaurant versions and the extra vegetables kept it light and a healthy diet
habit choice. I would definitely make this again, and I’m sure it will become
one of my favorite healthy recipes; it’s quick, easy, and tasty, which are my
criteria for a repeat meal!
